After dinner yesterday, Anthony, Guilhem and I went to stroll around Lille. Although it was freezing cold, it's pretty awesome to see the Christmas lights around the city.

We then stopped by the Christmas market and got us some mulled wine to warm up.See how I was wrapped up like a dumpling. Hahaha.. By the way, enough of the bluffing. So today I am actually going to talk about something I tried out at the Christmas market ,something scrumptious. It's the Gaufre fourree lilloise a.k.a waffle from Lille. My first time trying this out. Shame. Since I have been around for a few months now, it's my only regret.*shake head* Lol. Just kidding.
Unlike the Belgian waffles, they are very thin and have fillings of vanilla, rum, gin or chicory flavour in between. It has an oval shape of 6 cm and 12 cm. In order to make these waffles, it requires several steps: mixing flour, sugar, salt, yeast, butter and eggs and leave the dough for at least one hour. Then in dough balls, they will be cooked in the waffle iron. The most delicate operation is after cooking by opening the waffles in half to be filled up with fillings.

As we just wanted to try, 3 of us shared a pack of 10 vanilla flavoured waffles which was definitely a mistake! These waffles tasted heavenly. As they were so fresh, the vanilla filling was literally melting in my mouth. I would definitely go back for more!
